This is an amazingly refreshing soup. The key is to use the freshest fruit you can find.


Cold Fruit Soup

Ingredients:


½ cup sugar

½ cup water

½ tsp. cinnamon

½ tsp. nutmeg

3 cups watermelon, seeded and cut in large chunks

¼ cup fresh mint

1 pint blueberries

1 pint strawberries, diced

1 pint cherries, pitted and halved

2 cups seedless grapes, halved

½ pint red raspberries

2 tbs. Brandy

Directions:

Combine sugar, water, cinnamon and nutmeg in a small saucepan and bring to a boil on medium heat. Remove from heat and set aside. Puree watermelon and mint in a blender and set aside. Add ½ of each prepared berry in a blender and puree. In a large bowl combine watermelon puree, fruit puree, syrup mixture, remaining prepared fruit and brandy. Stir to combine. Cover and chill for several hours or overnight. Serve in chilled bowls with crème fresh.
